Day 18 of the KETO WOE....and life update.
I am so proud of myself. I have been going strong with ZERO cheating for 18 days!!!! The temptations for those unhealthy carbs and fast food are like a 3 out of 10 on the crave "o" meter. I just dont want to go back to feeling the way I used to feel because it's not worth it. And to be honest just smelling those foods I can't have is enough for me. I lose like 14 pounds so far. I may not see the change on the scale but I can see it in the mirror. I have lost some inches. I'm not saying that I will ever go back to chugging down carbs like I used to but for most days in my life I will do it the KETO way. Only on special occasions will I partake in the forbidden fruit lol. Like vacations since they don't come around so often. My husband and I plan on taking a cruise for our anniversary at the end of the year and best believe I will be pigging out. I can't wait. Also, we are planning a trip to Texas at the very end of March and I will not be pigging out as much as I will on the cruise but I will for sure be eating the texas goodness and having fun. But as for the keto WOE (way of eating), I love it. It's so simple and I'm not lacking in any way. I love to cook with fresh ingredients. You should see my fridge now....it jam packed with veggies like spinach, greens, egg plant, asparagus, portabello mushrooms, salad mix, brussel sprouts, kale. I use grassfed butter and coconut oil for cooking. I drink coffee, unsweet tea, mostly water, and newly introduced to unsweetned almond milk. Also, for meat my husband and I had a hog processed at the butcher so now we have a freezer full of meat...AND FRESH BACON!!!!!! AND SAUSAGE!!!! So good!!!! I'm glad we bought the hog because we were running out of beef from when we bought a quarter of a cow from the local cattle farm and had it processed. It lasted us 6 almost 7 months. I can't wait til the "meat guy" (the name I came up for the cattle farmer lol) to have another steer ready to go to the butcher because this time we will be buying half a cow which is double the amount and I'm sure double the price. But it is so worth it. I love not having to buy meat every week. When we buy our own home we will be growing our own food and won't have to go to the store for veggies anymore or eggs. I can't wait. This week I am going to experiment making bread with almond flour (since regular flour is forbidden....too man carbs). We shall see how that goes.
Also, spring semester has started back and it took me a few extra days to get back in the swing of things but I think I'm good now. I have a paper to write this week which sucks. I hate writing papers but I am hella good at it. Oh and for those who don't know I am in college studying criminal justice. This next fall semester starts my final year of school. I will graduate next june with a bachelor's in criminal justice. YAY me!!! I also already have an Associates in General Education (not much of a degree lol but I got it).
That's me....a wife, mom of 3, bachelor's degree having, keto enthusiast.
